The Glendalough Distillery is Ireland’s first craft distillery. We’re a small distillery set up by a few friends from Wicklow and Dublin with a passion for reviving the heritage of craft distilling in Ireland. We want to forge our own path and do things differently, just like the man on our bottle, St Kevin, did. For him it was building a civilisation in the wilderness, for us it’s innovative, independent spirits. We started out with Poitín, then whiskey and now gin. We use as much local ingredients as possible even to the point of picking wild, seasonal ingredients in the mountains around the distillery for our gin.
Check out the festival event we’re doing at JT Pim’s on October 12th at 5.3o pm. Our forager Geraldine Kavanagh will be going through the details of the wild botanicals she uses and the bartender maestro Darren Geraghty will be demonstrating how to mix with them! Tickets available here!
Single Grain, Double Barrel:
The nose is slight for a whiskey, but undoubtedly rich with dark fruit, cherry, raisin, fig – Christmas cakey – along with floral notes and lemongrass.
The taste is sweet and creamy on the palate to the front, with butterscotch, honey and peppercorn. Followed by dried fruit returning maraschino cherries and a pinch of brown sugar.
The finish has drifting notes of ginger spices and sweet vanilla with a faint shaving of almond to end a complex whiskey from start to finish.
