The Dingle Whiskey Distillery, in the old sawmills just outside the scenic town of Dingle, Co. Kerry, is Ireland’s first purpose built distillery in over 100 years. Oliver Hughes, Liam LaHart and Peter Mosley had a vision to bring an artisan craft distillery to the picturesque town of Dingle. The first spirit trickled from the stills in December 2012, as the country was beginning to come out of the worst recession in many people’s memory. Three years and a day later on the 19th December 2015, one cask, Cask No. 2 was released. The most recent release of Dingle Whiskey, Batch No. 2, in November 2017, showcased multiple whiskies with different flavour profiles. Batch No.2 included the release of Dingle Pot Still Whiskey, a historic step for the distillery, and Irish Whiskey, making The Dingle Whiskey Distillery only the second distillery on the island of Ireland to produce a Pot Still.
At the Dingle Whiskey Distillery we are passionate about flavoursome, well-crafted spirit. We use three distinctive, hand-crafted copper pot stills to create what we believe is the ultimate Irish whiskey. Their distinctive design, encourages reflux and has much to do with the smoothness and purity of our spirit. We use a small, swan neck pot still to achieve our desired effect on our multiple award-winning Dingle Gin and Dingle Vodka. Dingle Gin is the product of a considerable amount of technical and historical research. It is created using locally sourced botanicals including rowan berry from the mountain ash trees, fuchsia, bog myrtle, hawthorn and heather, to create a sense of place and provenance. The spirit is collected at 70% ABV and then cut to 42.5% ABV using the purest of water which we draw from our own well, 240 feet below the distillery. With Dingle Vodka, we were determined to create a vodka of supreme quality without attaching a wildly inflated price tag to it. Our still is charged with 500 litres of the finest, purest, grain alcohol and is then distilled for a fifth and final time. Dingle Distillery Vodka is most unusual in being quintuple distilled. That fifth distillation makes a huge difference which can be tasted in our vodka’s incredible purity, touch of sweetness and creamy texture that takes a lot of people by surprise. Dingle Original Gin and Dingle Distillery Vodka won the awards for the Best Irish Gin and Best Irish Vodka at the 2017 Irish Whiskey Awards.
Tours are held at the Dingle Whiskey Distillery all year round. We aim to give tour-goers an insight into how we create our world class whiskey, gin and vodka, and tours are concluded with a tasting of our whiskey and gin or vodka. Dingle is famed for its hospitality and this is seen no better than in the Dingle Distillery. We pride ourselves on an excellent informative tour that brings you into the heart of the distillery.
