“Bee Right With You” is my signature cocktail using Blackwater No 5 gin from our good neighbours down the river infused with exciting locally sourced ingredients. Fresh Honeycomb from S Bees honey Fermoy, medicinal edible calendula flower petals from Botanica Fermoy, cinnamon, honey infused bitters, fresh lemon and lime juice.
Strain honey from the comb and with, cinnamon and juices, add to shaker and place to one side. Pour Blackwater gin with a dash of bitters into a wine glass and ignite to nice flame, the power into shaker still alight, the heat will thin the honey and blend ingredients together, add ice and shake, double strain and garnish with honeycomb, crystallised honey and calendula petals add a dash of fever tree tonic to excite the flavours and serve.
We want to make great whiskeys and superb gins using the best local ingredients. We’re not a faceless conglomerate; we are real people who have invested time, money and not a little sweat into getting this business off the ground.
In the morning we switch on the lights, open the post and fire up the stills. Everything here is done by hand so we make our whiskies and gins in small batches the old fashioned way – no scrimping, no cheating, no colours, no flavourings.
Our gin then was designed from top to bottom using only the botanicals imported into Ireland by White’s of Waterford during the 19th century. In the dusty archives we found a treasure trove of botanicals once popular, but now overlooked. We distilled each and every one of these spices; some weren’t so great but two were spectacular and they lie at the heart of Blackwater No.5 Gin.
